MADE WITH LOVE: Pimentón de La Vera is a smoky "paprika" from La Vera in Extremadura, Spain. It is always smoky—dried traditionally over indirect-heat oak fires for ten to fifteen days, and finished over a slightly warmer fire for three more days. This process takes the ripe peppers to a low percentage of moisture, preserving flavor and color and imbuing them with the classic DOP smokiness.
